  Margi, before we get going on suggestion on particular pairings.  Would you be able to do a very basic/generic  intro to wine types?  Then a separate intro to pairing food type with wine types (acidity levels, etc).  Perhaps this could be done in a separate Pairing for dummies primer?  Also, would it be okay to have this thread as an idea thread...for questions and explanations.  Then start a different thread for the progressive pairing for week 1?

   I know that I need a basic foundation of understanding what the process is when pairing food with drink.  If you simply jump into specific selections, I don't feel I would learn nearly as much about these pairings.  But, I'd caution you, I don't have a good grasp on food drink pairing now...so I don't want to get too complicated too soon. 

   Thanks for this undertaking...I really do hope to learn/understand more about these pairings.  Not only to teach myself what types of drink goes with what food.  But I also hope to get a better understanding of the various spice levels, acidity levels, sweetness levels, etc, etc in my cooking as well.


Please don't burden yourself with this, if you can get to any of these requests at your leisure would be most appreciated...thanks!

Good Afternoon Dan,

I am honored by your request, and shall surely put together a basic Primer on GRAPE VARIETIES, and their qualities, nuances, aromas etcetra and why these wines pair with specific foods and why other wines do not enhance the dishes you are eating; and cause Acid or indigestión etcetra.

I will begin doing this as a separate REPORT on wines A TO Z ...

I believe, one must first understand the basic grape varieties of the world.

So, I will begin with this.

Then, I can move on to a GLOSSARY of basic terminolgy used in the sector; to present what is EQUILBRIUM OF ACID CONTENT IN WINE; The elaboration ( making of wine ), the service, the tasting and how, the cooking with wine, and how to purchase ... the color, the aromas etc.

IT WOULD HAVE TO BE a series ...

The wine producing regions outside of The Mediterranean ( this I am well versed in ) and the HISTORY OF WINE; may be a great enjoyment ...


This shall be started upon ... One Project at a time ...

You have a great point ... Just give me some time ... and I shall begin PRIMER OF WINES NUMBER 1 - THE HISTORY OF WINE

It is a fascinating subject ... and one who appreciates wine, will truly enjoy its origins ...

There is an excellent book called WINE FOR DUMMIES ...

This would be ideal Reading on subject ... Truly a basic course ...

    Thanks for the suggestions Margi...also on the courses.  I have thought about the courses before and think it would definitely be beneficial.  But I just don't have the time right now...though I will get to it in the future.

Due to some changes in the Progressive Dinner Series, and Dan´s profesional Schedule, the next dinner shall be moved to the 19th.

A new thread shall be started for the beverage pairing guide ...
