Baked Apples with Rose Water

Found a lovely colorful and aromatic classic Lebanese recipe for Baked Apples employing Rose Water Syrup dressing:
 
The Syrup:
 
1 cup of sugar
2 cups of water
2 tsps. of Rose Water
4 Apples of Choice
 
The Stuffing:
 
1/2 cup fresh peeled apricots or peaches or nectarines chopped finely
2 tsps. glazed ginger or grated with a pinch of sugar
a bit of lime or lemon zest chopped very finely
a very tiny pinch of cinammon
 
1) preheat oven to 180 centigrade degrees
2) spread some unsalted butter or oil of choice to the bottom of a baking dish
3) prepare the stuffing and combine the ingredients in a bowl
4) simmer the water and add the sugar, stirring to dissolve on a low slow flame, and then add the rose water and simmer to boil 3 to 4 mins.
5) core the apple and if desired peel them
6) fill the core with the stuffing
7) bake for 17 to 20 mins.
8) serve warm with whipped cream or icecream or mascarpone if desired
