Barbados - Poor Man's Liqueur

From Culinaria: The Caribbean (1999):

Quote It is claimed that this recipe has been passed down from the colonial plantation days when slaves were given their ration of rum on special days. The slaves invented this Bajan delicacy in an attempt to emulate the liqueurs sipped by their masters after a sumptuous dinner in the Great House.

3 limes, pared in a continuous strip
3 cups (500 ml) of white or brown rum
1/2 cup (125 grams) brown sugar

Put lime in an oven-proof dish. Warm rum and brown sugar in a small pot over low heat. Pour rum into the dish with the lime and ignite. Lift the flames with a long-handled spoon for about 2 to 3 minutes. Blow out the flames and serve cooked in liqueur glasses.
