Sadly my canning days died with my wife. I should have had her teach me what she was doing instead of just being in cahrge of lifting and filling huge canning pots and presser cookers.
The one thing I do know is she made the only pickled beets I ever liked. (beets for that matter) and her secret was cinommon and nutmeg and 1/2 a habernero in each jar. (quart) Wish I could tell you how much cin, and nutmeg she used , but yall ought to try it.

MM,
You topic Reminds me of my Sisters Pickled Beets she does...
Her's comes out tastying like Apples and really confuses you when you bite into them and like them and then find out they are Beets!
I've tried to get the recipe from her many times but she will not let it out, it is 1 of those Recipes that she got hold of and uses it to make Christmas Presents from!
Canning Really isn't all that Hard, if you can cook and Follow Directions, you can pretty much can...
Don't let it seem like a major experiance to you!

hey, MM - these turned out really good:
i imagine all one would have to do is add half an habanero and possibly a little nutmeg (although the allspice might cover that) it would be really close to the ones your wife made.
