In the Azores on the Island of San Miguel lies a very interesting geothermal region and at it's center is a town called Furnas.
And in this town is the most amazing bakery that is famous for one item.
Bolos Levedos is like a yeast risen pancake and is sweet.
I fell in love.
This recipe is close to the version that I make.

My grandson started making these with me when he was 3 years old. They are a great favorite.
I cook 6 at a time in an electric skillet on low-about 10 minutes per side under cover

The boy learns early

The dough is cut in quarters.

Then each quarter is portioned into 100g balls and flattened for further rising.

The sweet reward

He is also one of the most skilled 4 year old cheese makers that I know. His 30 minute mozza is impressive.
