1) Israel is Evoo producing, thus, this is what I employ.
 
2) As Ahron, stated and he is an expert in Israeli cuisine, yeast is not required, however, yeast powder is yeast ...
 
3) It is up to you; as Ahron suggested, you can grate some onion.
 
4) I use yeast, so the chickpea balls are not so flat ...
 
5) I have a Greek Pita connection, and thus, use Pita, however, one can use Focaccia too ... or an Israeli flat bread home baked. However, this is up to your local availability.
 
6) I am more fond of Tzatziki and Tahine is outrageously expensive in Madrid ... So, I usually make either Tzatziki or a Greek Melitzanosalata ( similar to babaghanuj ) or  a  Tyrosalata with mine; a Greek roasted red pepper & chili pepper & feta dip to go along ...
 
All my Greek classics are in Greece Section.

The only venues I have ever seen Falafel in ( in Madrid ) are Turkish, in the city centre.

They prepare them in a large pita type round and fill them with with small patties of falafel, shredded salad, tahini dressing and tomato.

Great for a quick meal on the run ...

Yes!  Falafel is served in Pita bread by a local street vendor as well as local Moroccan restaurants.  Delicious!

Yes, Falafal is an enjoyable specialty ... It is a Street food in many Eastern Mediterranean countries ..
