When I am making Salmon Candy I like to thread the strips on oiled wooden skewers.
Makes it easy to drape and smoke without the maple syrup sticking to the racks.

Excellent tip! I've never made salmon candy, but I want to sometime. When you have a spare moment, I'd be obliged if you posted the recipe.

I do, however, smoke a lot of rainbow trout, and the sugar in the brine indeed makes a sticky mess, so I will be trying this next time!

It will be a bit before I can get into my recipe files because they were buried in the depths of the basement storage when I pulled out the Xmas decorations last week. As soon as I return the decorations to storage I will unearth the recipe and post- I promise
