Well shame, shame, shame on me!!!

I could have sworn that I'd posted this recipe from my cookbook before, but apparently it slipped my mind.

If you're looking for a quick, easy one to make the kids happy you can get this all done easily in an hour.

Captain Crunch Chicken

My thanks to good friend Lisa Tracey for this very tasty way to prepare chicken.
This is a knock-off of the Planet Hollywood favorite.

Serves 4

   2 lb chicken tenders
3 cup captain crunch cereal, pulverized
   1 1/2 cup cornflakes, pulverized
   1 egg
   1 cup milk
   1 cup all purpose flour
   1 tsp onion powder
   1 tsp garlic powder
   1/2 tsp black pepper

Heat oven to 350°F

Pulverize the cereals in a food processor until very fine.

Place in a pie plate and set aside.

Stir together flour, onion powder, garlic powder and pepper, and place in another pie plate.

Beat the egg with the milk and place in a shallow dish.

Dredge chicken pieces in the flour mix, then egg wash, then cereal mix until well coated.

Bake for 45-60 minutes, and serve with Creole Mustard Sauce

Go ahead...play with your food!

Here is the Chicken and creole mustard sauce "by the numbers"

I started off by making the Creole mustard sauce so it could meld all the flavors together in the fridge for a while.

First the mayo

Then 1/4 cup spicy whole grain mustard, and some mustard seed

Then some garlic, dehydrated onion, celery and chives...cider vinegar and red wine vinegar....some water and mix it up

I added a good dash of tabasco chipotle sauce at the finish line.

OK...you folks know how messy it gets when you start dredging your chicken pieces right?
That's right.
Too messy to take pictures...sorry about that.

I used chicken tenders and just followed the recipe...dredge in the seasoned flour, dip in the eggs wash and roll in the cereal mixture.

We wanted to just eat it like a snack in front of the TV...so this is how it came out.

Just in hope it will help you out here Jarrod...Captain Crunch is made of oats and corn and is extremely sweet....if you have a similar cereal there I'm sure it would work out just fine.
