Caribbean Curry Powder

This recipe comes from Culinaria: The Caribbean (1999), and looks like a good, all-purpose seasoning for many island dishes; I'm even thinking that it might make a good base for a Caribbean-themed barbecue or grilling rub.

Quote Caribbean Curry Powder

2 tablespoons each of whole spices:

Black Mustard
Black pepper
Dried hot chiles

2 ounces coriander seeds
2 cinnamon sticks
4 tablespoons ground dried ginger
2 tablespoons ground dried turmeric

Dry roast all the spices together with the coriander seeds. Grind and mix with the ginger and turmeric.
