Ingredients:
1 cup carolina cola rub (see below)
1 cup carolina BBQ sauce (see below)
2 cups water
8 hamburger buns
2 cups coleslaw (see below)
4# boneless pork butt

Prepare the BBQ sauce & cola rub 1st
rub the pork butt with the cola rub and hold overnight
Put the water in a roasting pan and then wrap the roast in parchment paper and foil
(note:  be sure to wrap in the paper first or the cola rub will eat holes in the foil)
Bake in 325 convection over for 3 hrs at which time the meat should be very moist & soft
shred the meat
heat up the BBQ sauce and pour over the meat.
serve on a burger bun topped with coleslaw

carolina cola rub
1/2 cup cola
1/2 cup cider vinegar
1/4 cup salt
1/2 cup paprika
1/4 cup black pepper
1/2 cup yellow mustard
mix well

carolina BBQ sauce
1/2 cup cattlemans BBQ
1/2 cup yellow mustard
1/2 cup sugar
3 Tbl  tabasco
1 Tbl apple cider vinegar
mix well

cole slaw
2# shredded cabbage
1/2 cup shredded carrots
2 Tbl diced onion
1/4 cup sugar
1 tsp white pepper
2 tsp celery seed
2 Tbl horseradish
2 Tbl yellow mustard
2 cups mayonnaise (real stuff)
1/4 cup apple cider vinegar
1/4 cup heavy cream

Combine the sugar, pepper and celery seed
stir in the horseradish and mustard
add the mayo and mix well
stir in the vinegar
add the cream and mix
mix the vegetables together
mix the dressing in with the vegetables
hold in the refer. for several hours to meld the flavors together

Sounds great Butch! I use horseradish in my coleslaw as well...I have one version with buttermilk, and another "creamy style" you can check them out here if you want.
