I was raised in Winnipeg, Manitoba Canada.
Most of Canada's population is relatively close to the US Border. When European immigrants arrived in Canada they generally arrived in Halifax and were shunted West away from the coast to make room for more immigrants. Many made it by railway to Winnipeg and got off the train and called it home. For it's population, it is incredibly diverse and that is reflected in it's food. In 1970 Winnipeg started hosting a festival celebrating the different cultures that call Winnipeg home. It is known as Folklorama. This recipe was featured in the book Folk Festival Fare by Edith Cherniack 1977 Peguis Publishers Limited. It was a popular dish in the Slovenija Pavillion I am making it for dinner tonight. 1 lb good quality ground beef 1 lb ground pork 2 tsp salt 1 tsp black pepper 1 tsp red sweet paprika 1 egg 1/4 cup red wine 2 cloves garlic minced Mix all ingredients together and let stand 1 hour or more in refrigerator. Roll into 1" thick 2" long rolls. Barbecue or fry. Serve with Spanish onions and bread. Cevapcici tastes better barbecued over hot coals until light brown Pics to follow |

If I close my eyes- I think I am in Europe as I smell these Cevapcici on the grill.
This forum is motivating me to offer my family Foods of the World. Who knew :) If there were a Foods of the World travel experience company-I would love to travel with them and cook and eat in each of the countries listed in the headers. |

Croatia, Bosnia, Macedonia, Montenegro, Serbia, Slovenia & well as others in the Balkan region all make variations. Just google cevapcici or cevapi & have fun.
Normally I just buy them because I can get several different ones locally manufactured as well as the lepinja bread...

This looks fabulous ... And Ak1, this is lovely. The Turkish and the Greeks do this with lamb or chicken or feathered game and I have even seen it with Fish in Greece, Turkey and the Italian side of the border of Slovenia.
I shall give this a taste testing during the holidays coming up. Thank you for posting. |

This sounds very close to what a Greek gyros recipe would be like.....served in a pita with onion, cucumber and with tsatsiki sauce this would be marvelous.

Or shape it like that on a skewer and you've got the Turkish Doner Kebab. Substitute ground lamb, grill it on a stick, and it's the Lebanese Kofta Meshwi.
Ground meat shaped like a finger and grilled is probably the most popular form of street food in the world. And for good reason: it all tastes great! |
