This French Burgundy zone cheese is a 100% Goat cheese variety. The characteristics are: a bland and acidy cheese with a pale green blue rind when young and a dark beige rind when aged to maturity.  10 days for fresh and 4 months for aged are the French Government´s Designation of Origin regulations.
 
The texture is spreadable and bland, tender and with granules with a white color when young.
 
The tasting notes include:  a soft milk like aroma of milk with an elegant equilibrium. This cheese is not bitter nor sour in flavor notes.
 
It pairs extremely well with: Sancerre White Chavignol wine and fruit, spread for crackers and  caramelized onion in salads.
