Good Evening,
 
Christina Hansson, who was born and raised in Stockholm, Sweden and was studying Spanish in the Madrid Capital for two years, and I had become good friends. We still keep in touch.  
 
She moved to North Carolina, to further her medical studies in Chapel Hill - Raleigh and thus, here is her cookie recipe which she sent to me via email.
 
Christina´s  Swedish Cream Cookies ...
 
2 3/4 sifted flour All Purpose
1/ 2 cup cream ( 125 Ml. )
a pinch of salt
250 grams of butter ( 1 cup)
sugar to taste
6 ounces or 185 grams of semi sweet chocolate
 
1) mix together the flour, salt, cream and butter. Then chill.
 
2) roll out on a sugared wooden cutting board ( or plastic ) to the thickness of 1/8 inch ( 3 mm.) and slice into desired shapes.
 
3) bake at 350 farenheit degrees or 180 degrees centigrade for 10 mins.
 
4) then put together as a sandwich with the chocolate filling
 
*** Yield: makes approx. 8 dozen small cookies.
