My 17 year old Daughter has been bugging me to get the 1 rear deer leg out of the freezer and slice it up and make her Hot Jerky...
 
So Monday I got it out, let it thaw and sliced it up when I got home from work, mixed up a batch of jerky brine that she likes, not to much of a recipe, just a bit of this and that and then soaked for a few days...
 
Basic ingredients are crushed red peppers,Black Pepper, Texas Pete Hot Sauce, Garlic Powder, Onion Powder, Brown Sugar, Salt and sodium Nitrite...
 
I put half the batch in the smoker today at 9 am, by 3 it was done, took it out let it cool and tasted it, I knew as soon as I tasted it, she was going to say "NOT Hot Enough Dad!"
 
Told her it was done, she tastes it, YEP, got the reply I was expecting!
 
So I added more black pepper, crushed red peper, garlic and onion powder to it to kick it up a bit...
 
There WAS a Bag laying on the kitchen Table...WAS is the Key Word...Seems it was not hot enough but she sure put a Hurting to about 2 pounds of Jerky this evening!
 
How do they eat so much in so little time??

All you need do is put a dab of Rivet's calypso salsa, or Boilermaker's Habanero salsa in that marinade and she will definitely not tell you that again
