DEGNO DI PRANZO DI NOZZE denotes, dignified for an Italian wedding lunch and this well known Napoli based large tube pasta dish with Lamb Rag첫 is scrumptuous, and chockful of aromas, taste and history dating back to the XVIII in Naples, Campania.

Paccheri con Rag첫혻al Degno di Pranzo di Nozze ...혻
Tube Pasta with Lamb Rag첫 Dignified For혻a Wedding혻...
11 ounces or 300 grams Paccheri di Gragniano Pasta or similar large tube pasta
200 grams or 7 ounces of Leg of Lamb
2 onions or 4 shallots
8 fresh Basil Leaves
250 grams or 9 ounces of fresh ripe red혻tomatoes, de-seeded and peeled
150 grams of Caciocavallo or Reggiano Parmesano or Gran Padano Grated Fresh혻Cheese
3 1/2 tblsps. Italian or Italian Style Red Wine ( 5 Cl. )
3 1/2 tblsps. Italian Olive Oil
Salt and Freshly ground Black Pepper
INSTRUCTIONS ...
1) Slice the leg of lamb meat into medium size diced cubes, add salt and혻freshly ground black pepper혻and then, golden brown the meat chunks by saut챕-ing in Olive oil in a skillet.
2) Drain the golden brown혻lamb chunks and place the meat cubes in a large bowl of chilled water with 4 teaspoons of Red Wine, and re-adjust the salt and freshly ground black pepper.
3) In the meantime, let the meat marinate and혻mince the onion or the shallots and saut챕 in Olive Oil, for approx. 5 mins.
4) Incorporate the혻rest of the red wine into the skillet with the onions or shallots and let evaporate.
5) reduce the finely chopped tomatoes혻to a pure챕 ( blender or food processor or electric mixer )
6) place the onions into the skillet with the onions, and add the basil leaves
7) Prepare the paccheri혻tube pasta in boiling salted water ( recommend: Barilla or De Cecci Brands)
8)혻Strain the pasta well and혻add the sauce to the pasta and toss gently not to break the tubes and then, add the lamb chunks and toss. Adorn with Basil leaves on a platter.
9) Ready to serve with a bottle of good Red Wine from Italy,혻crusty hot oven baked Italian breads, or Focaccia or Polenta cornbread and freshly grated cheese. 혻
