EASY HOMEMADE BEEF STOCK

I hail from a culture, that just does not open cans or tins, or pour jar ingredients into stock.
 
It is so simple, as A, B, C  to make a quick homemade beef stock or chicken stock.
 
Here is a recipe that does not fail ...
 
1/4 extra virgin olive oil
4 pounds of meaty beef bones ( shank or neck )
1 large onion ( if you prefer shallot, spring onion or leek )
4 quarts water
 
Yield: approx. 3 1/2 to 4 cups
 
1) heat the oil in large stock pot over medium high heat
2) sprinkle bones and meat with salt of choice and freshly ground pepper
3) add the onions to the pot and sauté until golden
4) then, add the meat bones and sauté 20 mins.
5) add 4 quarts of chilled water and bring to boil
6) reduce flame to slow low simmer
7) reduce the stock to 3 1/2 to 4 cups
8) strain and discard the bones and onion
 
Very easy;
