Good Morning, Buon Giorno,
Emily, a dear friend while she resided in the Madrid Capital returned to her native birthplace of Seattle, Washington for a fabulous job offer at the University of Washington State, in the Spanish Language Department. Thus, she has sent me some recipes from time to time, and here is one of her favorites to try.
FRUIT PIZZA
1 1/4 cups all purpose flour
1/2 cup room temperature butter
1/8 tsp. salt
1/3 cup Ricotta, or Cremè Fraîche or Sour Cream
Filling:
1 eight ounce package of Philadelphia cream cheese
1/4 cup juice from drained fresh fruit
1/8 cup Confectioner´s sugar
1 tsp. vanilla or lemon extract
Fruits:
29 ounces of jar peach slices or fresh Mango
16 ounces of fresh peeled, cored and de-seeded pears or apples of choice
a jar of maraschino cherries or fresh cherries
1/2 cup marmalade apricot or peach or pineapple or mixed berries heated and sieved
1 tblsp. Rum marinated with the fruit juices
1) in large bowl, combine flour and salt
2) add the butter until mixture resembles coarse crumbs
3) stir in ricotta or cremê fraîche or sour cream
4) dough will be sticky
5) roll dough into ball and flatten
6) wrap in plastic and refrigerate overnight
7) preheat oven to 375 degrees farenheit
8) roll out the dough into a 12 inch pizza pan and bring it up the sides
9) lightly flour rolling pin or hands and prick bottom of pizza dough at 1" intervals to prevent crust from shrinking and lay foil on dough
10) fill with dried beans or rice and bake 10 mins.
11) Remove foil and the beans or rice, and bake another 8 mins. - 10 mins.
A) drain fruits and place on paper towelling
B) arrange the peaches or Mango slices around the edge of the dough in the pizza pan
C) make the inner circle with pear or apple slices or both if you wish
D) place cherries in the centre and place the marmalade with Rum brushing over top
SERVE WITH VANILLA ICECREAM AND A PORT OF CORDIAL OR COFFEE OF CHOICE.

Yes this will be nice with fresh fruit! But I think we have to call it Fruit Pie. Naaaa, it looses all ties with what it is! It is a Fruit Pizza!
