My dear friend Emily, of Paniimanian and Cuban heritage; was born and raised in Seattle, Washington. We met, while she was working for Disney Spain many years ago. She had lived in Madrid for 5 years, and returned to Seattle for a professional opportunity she could not turn down.
 
This fun recipe hails from her ...
 
 
 
 
EMILY´s PIZZA CUP CAKES
 
50 grams of pancetta strips ( sliced very finely and tiny )
50 grams of Spanish or Spanish style air dried or smoked sausage slices very finely in strips
100 grams of mozzarella di bufala or aged Provolone
1 egg
75 grams of AP flour or unbleached AP
1 teaspoon powdered yeast
30 Ml. milk lowfat or whole
2 tblsps. Evoo
1 pinch of salt
1 or 2 Muffin Tins for Baking                                                                           
Cupcake Holder Papers are optional
a bit of grated Grana Padano, or Reggiano Parmesano
 
 
1) preheat oven to 180 degrees centigrade
2) Now prepare the Muffin Tins; if using the Cupcake Holders, place in the Muffin Tins
3) sauté without lard, the sausage until golden and then, the pancetta until golden on both sides
4) drain and place on paper towelling
5) beat the egg, and incorporate with the flour in a bowl with the yeast and a pinch of salt
6) mix thoroughly to obtain a thick batter  and then, add the Evoo and the Milk and combine thoroughly until homogenized into a thick smooth batter
7) incorporate the strips of sausage and the strips of bacon; or anchovies and capers; or sautéed red bell pepper and sweet onion ... or smoked salmon ... or Ham of choice with mushrooms or vegetables ... and incorporate the cheeses ...
8) now mix until uniform and slowly pour the batter into the cup cake papers or tin directly if you prefer
9) bake 15 mins to 17 mins and intoduce a toothpick into the cupcakes and if it comes out dry and clean; they are ready.
