So, the big holidays---Christmas, Hanukka, Kwansa, etc.---are coming up.
I go to be wondering: What's everybody's favorite holiday meal? For me, it's roast fresh ham, cuz that's what we celebrated with when I was young. We kids traveled to a friend of the family's house on Christmas Eve, where we helped decorate the tree. My folks joined us there Christmas day, where we enjoyed our traditional fresh ham dinner. What about everyone else? |

For me it'd have to be ham. Plain and simple. I'm not a huge turkey fan, in fact I didn't even have one piece over thanksgiving, but I'll gladly take some ham please.

It would be baked ham for me as well, with raisin sauce or Cumberland sauce. I look fowward to the leftovers as much as the ham dinner itself....you know that scalloped potatoes with ham are on the way, and so is a wonderful split pea soup.

I have not had Cumberland Sauce for over 25 years. Thanks for reminding me how tasty it is. Last time was with a Game Pate en Croute. I am cheating with the Scalloped Potatoes this year, but normally I made a rich chicken stock with garlic- Cook the potato slices until al dente in the stock- then remove the potatoes- Reduce the stock until it is thickened and syrupy and then add cream and Morel dust and reduce with a hint of nutmeg-then I pour the sauce over the potatoes and top with a grate of my best cheeses and flash under the Salamander |

Ham is my hands-down preference over turkey - but having said that, we bought a wonderful fresh turkey from a local Hutterite colony for Thanksgiving this year and it was easily the best I've ever had - especially with all of the trimmings.
We will be attempting a prime rib roast using beef from my family's herd for Christmas this year, along with a ham, of course. I want to attempt Yorkshire pudding as well - so much of the meal will be a learning experience. My plan as of now for the rib roast is to keep it simple - and of course traditional.
