I'm curious as to how many great methods there are out there to vary the preparation of fresh vegetables.

If it's an option, I'd rather them raw. if it's a root vege like potato, roasted. If I can't have it raw and it's not a root vege, stir fried very fast so as to preserve crunch and nutrients.

My all time cooking hate is limp, boiled vegetables.

i like stir-fried or steamed so that they are still crisp, as kiwi said. raw is fine, too, but i usually like the addition of some flavour.
 
for potatoes, i prefer mashed, but roasted is fine, too, and my preferred way for other root veggies. if they are boiled longer than a few short minutes, then i don't want them.
 
for any veggie, grilled over a flame is always a good option! i don't like canned vegetables, so either fresh or frozen is how i prefer to buy them, if i can't grow my own.

All are good, even plain old boiled. That's pretty much how one eats home canned green beans right? So, it's all in the prep-work, the flavors you put in the canning and when you are boiling.
