Sant Jordi ( Saint George ) ..

The 23rd of April is the celebration of the Patron Saint, Jordi, and dates back to the year 1507.

Sort of similar to Saint ValentineĀ“s Day, women receive roses from Gentlemen, and Gentlemen receive a book from the ladies.

It is a truly lovely festive day, and it hails from the days of the the great literary authors. A literature and romance day.

What is served on this day, is basically " CAZUELA MARINERA AL ESTILO DE CATALUNA " in all its varying forms ..

The ingredients include:
SAFFRON THREADS
EVOO
FISH BROTH FROM FISH STOCK HOME MADE
SHALLOT OR LEEK OR GREEN SCALLION
1 BULB OF FENNEL
GARLIC CLOVES TO TASTE
4 TABLESPOONS OF CASIS LIQUOR OR WHITE WINE OF CHOICE OR SIDRA =
ASTURIAN SPARKLING CIDER
RED RIPE JUICY TOMATOES, PEELED AND DE - SEEDED
BAY LEAF
THE MEDITERRANEAN FRESH HERBS: BASIL, PARLSEY, OREGANO, THYME, SAVORY WINTER OR SUMMER  AND ROSEMARY
1 DOZEN PRAWNS
LOBSTER, CRAB OR JUMBO PRAWNS
MONKFISH OR GROUPER OR ANY OTHER FIRM FISH
MUSSELS OR CLAMS OR BOTH
BABY SEPIA ( SQUID AND / OR CALAMAR SLICED IN RINGS )
CLUSTERS OF BABY OCTOPUS (OPTIONAL)
SALT AND BLACK FRESHLY GROUND PEPPER TO TASTE
1 TINY DRIED HORN SHAPED RED PEPPER CALLED " GUINDILLA " (OPTIONAL )

THIS CAN BE PREPARED WITH  A WIDE VARIETY OF FISH AND SHELLFISH OR SEAFOOD TO ONEĀ“s TASTE AND AVAILABILITY ..

IT IS NOT SERVED WITH RICE OR POTATOES.

IT CAN BE SERVED WITH VERMICELLI PASTA BROKEN TO SHORTER LENGTHS OR  "FIDEOS" WHICH ARE TINY SOUP NOODLES. ( PREPARE AL DENTE AS THEY SHALL BE SITTING IN BROTH AND YOU REALLY DO NOT WANT "MUSHY PASTA" ..  )

IT IS QUITE FILLING SO A TRI COLOR SALAD SHALL DO WITH SOME WONDERFUL CRUSTY BREAD.
Volamos a Mediterraneo, un paraiso que conquista su gente u su cocina.
