Does anyone here have a good recipe for Spanish chorizo?
All that is available here is Mexican chorizo.
When you read the ingredients list, as I always do, it starts out with , lips, salivary glands and goes downhill after that.
I have tried the Mexican, in my opinion, it is just a nasty, greasy mess.
The descriptions of Spanish chorizo I have read actually sound as though it is edible.To buy some Spanish chorizo is very expensive, some is $30 for less than a pound.
As it is a pork sausage and I can get a boston butt for $1 lb or so, I do not want to spend 30 or more times that.
I am open to trying several recipes so bring them on.

I'm with you on the mexican chorizo, tried it once. Never again. Nasty stuff. I would like to try spanish chorizo though.
