Hi! Several years ago, a friend of mine spent several months in a rural part of Russia. While there she had a beet salad that she remembers as being made with beets, mayo (or maybe sour cream?)and garlic. Does anyone know of this? I have made it with mayo and I think it is really good, but am wondering if there should be other ingredients or if it's just that simple.

Slavyanka makes one like this, only she uses sour cream instead of mayo and adds walnuts and/or raisins. You can also use diced prunes.

Russian Beetroot Salad .. 1 kilo of potatoes 1/ 2 kilo of red beetroot 1/ 2 cup of diced celery 1/ 8 cup sweet pickle hand made relish a splash or 2 of White wine or White cider vinegar Extra Virgin Olive Oil ( 1 tablsp. per person ) 1 Tablesp Dijon Mustard salt to taste white peppercorns ground or White pepper to taste 2 or 3 carrots diced finely Serve on a bed of various lettuces of choice ( boil beet root separately from the potatoes and the carrots = 3 pots ) .. Quite tasty .. You could probably add sour cream or mayo as well if you wish .. I am lactose intolerant so I cannot eat sourcream .. I add handmade Mayo which is just the yolk of an egg, and extra virgin olive oil = ali oli ) .. |
