Anyone ever make Deer Kielbasa??
 
I made a 15 pound batch this past weekend.
 
Used Hi Mountain Polish Sausage kit mix to make it...
 
Instructions in the kit called for 9 pounds of Ground Pork Butt and 6 pounds of Ground Deer Meat and Crushed Garlic to be added to come out with Kielbasa.
 
I reversed the meats to 9 pounds deer and 6 pounds pork due to me liking DEER MEAT in my stuff I make and not Watered Down deer meat!
 
Well, I know I did not crush enough Garlic for you can hardly taste the Garlic!
 
And the texture...HUM, VERY GREASEY!  I know Kielbasa is supposed to come out on the Fatty side, but 1 would think with ONLY 6 pounds of ground pork butt in the mix and that pork butt had not much fat on it, the end result would be not to greasey!
 
This Kielbasa  is pretty much dripping with Grease when you go to eat it...it has a nice flavor but it just seems something went amuck and caused it to get all drippy and greasey.
 
 
put it in the smoker at 10 am and had a prob thermometor in 1 of the links, put 3 pans of apple chips thru the smoking process and it took till 11 pm for the internat temp to get to 155.
 
I butchered the deer, I leave Very little Fat on the meat, so the result of the grease was not due to to much fat on the deer meat!
 
 
Any thoughts on WHY it came out Greasey?

Do you have any idea what the actual ratio of lean meat to fat was Woody? Could be you just got a couple of very fatty pork butts?
I would have expected it to be a bit leaner than normal with the ratio of venison to pork.

i would also fave thought the fat would have been toned down after reversing the rastios. did you remove the fat cap from the pork butt?
