i love the idea of sausage and have made a few simple ones. i don't have a stuffer like that, but i do have a couple of a different type, one put out by the makes of the little chief smoker, and the other put out by the folks at hi-country jerky. they are pretty simple and manual (the little chief one is a plunger-type system while the hi-country one is similar to a jerky gun, but sausage casings can be stuffed with it), but they will do the job well and make two common sizes of sausage. for any other sausage that i make, i figure that the bulk/crumbled/patties will do the trick!
i've got zillions of sausage recipes over at www.baitshopboyz.com. will see if we can get a few of them transfered over here.

I just use my Kitchenaid mixer to grind and stuff...it works out ok, as I omly make sausage maybe 5 or 6 times a year.

here is a pic of mine. I got it from my grandpa which said it was older then he was and he just turned 80 years young. It taught me a lot of techniques..lol...this is a pic when we first got it...cleaned it up some now.

I bought the 5# Stainless Steel Stuffer from Grizzly just before Christmas but still haven't used it. I hope to make some sausage in the next few weeks.

Yep Im a Sausage maker....7 generation....
got a recipe book full of Sausage Plus what I have gathered from good friends...Buddy has my stuffer...but I still have my Jerky gun Stuffer and my grinder/ Stuffer...
