I had some macadamia nuts left from when I made pie a while ago.

I tossed them into some rum and will let them macerate for a month or so. At that point I'll give it a taste and either add some water to bring the alcohol down to25- 30% or just leave it as macadamia flavoured rum.

Hi Margi,

I filtered it today for the first time. Now I'll let it sit for another week or so to let the fine particles settle, then I'll filter it again, and at that point blend it with the sugar syrup to make the liqueur.

I'm thinking now though, perhaps I should have used vodka rather than the golden rum. I'm worried that the rum may overpower the macadamias.

Rum tends to be veered towards Tropical and Latin American noted products; Mango, pineapple, bananas, coconut, macademia nuts etcetra. Notice: Rum is predominately produced in: Cuba, Puerto Rico, The Dominican Republic, Venezuela, Jamaica etcetra.  
 
I believe it should be lovely.
 
Perhaps Vodka, which tends to be produced in extremely cold climates; Poland, Sweden, Russia, works extremely well with Berries, and Spices, for example, Vanilla and Citrus.
 
If one looks in their local retail wine shop; it is noted, that Vodka Absolute is veered towards the flavors in the above sentence. And, look at the Rums, and one shall find combinations for tropical fruits and products.

I see where you're coming from Margi. My initial idea was that Macadamia's are a tropical nut, and rum.... pretty much made in tropical regions... would go well together.

Alas, I am starting to think I may have erred in my thinking. Macadamia nuts are not IMO a strong tasting nut. I'm starting to think that I should have used vodka or at least a young white rum.

Nonetheless, what is done, is done. We'll see in a few days.

Cannot wait to hear about the taste test results and see the pictures.
 
Yes, the initial idea, was tropical with Rum; however, Macademias are a delicacy, so perhaps Vodka would be an alternative.
 
Since you are about to do the taste testing before the week is out, you shall be able to have a better idea on the taste profile.

Had a taste a few days ago.

It's very subtle. There is a subtle nutty taste, but not overpowering at all. Not overly sweet, but a nice creamy mouthfeel. 

I'm happy with it. I may do a new batch using vodka rather than golden rum, but because of the cost of macadamia nuts and the subtlety of flavour, this won't be something at the front of the queue.

What about Spanish Brandy ? and / or Aguardiente ?
 
 
Yes, Macademia Nuts are quite pricey as are Brazil Nuts, which I am crazy about too.
 
Spain is a hazelnut and almond producer; and now walnuts are produced in Andalusia too, as this region has a California Mediterranean Climate.
