Here is a holiday recipe from our family that goes back quite a few years.
It just isn't Christmas unless my wife makes up a batch of her wonderful golden apricot bars.

Golden Apricot Bars

1/2 cup butter

1/2 cup sugar

1/2 tsp baking powder

1 cup light brown sugar, packed

2 eggs, beaten

1/2 tsp vanilla extract

1/2 cup walnuts, chopped

1/4 tsp kosher salt

1-1/3 cups all-purpose flour, sifted

2/3 cup dried apricots




Heat oven to 350°


Place apricots in pot, cover with water and boil10 minutes. Cool and chop into small pieces, set aside.


Combine butter, sugar and 1 cup flour until crumbly. Place in 9x13 pan packing down with fingers until the bottom is evenly covered.

Place in 350° oven for 25 minutes or until golden brown. Let cool and set aside.


Combine brown sugar, 1/3 cup flour, baking powder,salt and nuts and set aside.


In a large bowl, beat eggs well and add vanilla apricots and mix until combined.

Add the dry mixture to the egg mixture.....do small batchesuntil completely mixed and continue until all dry mixture is combined well into egg mixture.


Pour mixture over the pre-baked bars...bake for an additional 25-30 minutes.


Go ahead...play with your food!
