About ten years ago I was browsing the remaindered table at a bookstore in Florida and found a book that had gotten surprisingly little exposure. Called Gardener’s Community Cookbook, it’s one of those packaged tomes consisting, primarily, of recipes submitted by people with a common interest. In this case, fresh, usually home-grown, produce.

Turns out it ranks among the best two bucks I’ve ever spent. I use it often.

 

So it was last night. We wanted an interesting salad to go with the Beef Bourguignon I was making. Turned to Gardener’s Community Cookbook, and there was a perfect match.

 

I’m putting it in this forum because it was submitted by Barbara Haugeland, of Pittsburgh, PA.

 

Mango and Radish Salad with Lime-Ginger Dressing

 

1 med red onion, quartered and very thinly sliced

½ tsp salt

2 ripe but still firm mangos

12 radishes

12 green grapes

½ cup cilantro sprigs

1/3 cup lime-ginger salad dressing

 

Peel mangos, deseed, and slice. Cut radishes in half, then divide each half into three wedges. Divide the grapes in half, lengthwise.

 

Pus the onions in a small bowl, sprinkle with the salt, and set them aside to wilt, about 15 minutes.

 

Arrange the mango slices, radish wedges and grape halves on a serving dish. Strew the wilted onions and cilantro sprigs over the top and pour the dressing over all. Serve right away.

 

Lime-Ginger Salad Dressing

 

3 tbls fresh lime juice

2 tbls olive oil

½ tsp grated fresh ginger

1/8 tsp black pepper

1/8 tsp salt

 

Mix ingredients in a small jar, shaking well to combine. Use right away or set aside for up to several hours, but not too much longer or the dressing will lose its fresh aroma and brightness.

I prepare one very similar, however, I am going to make your´s this weekend ... Not that it needs a pictorial, however, shall post a few photos of the products, the making of the dressing and the finished salad ...
 
Truly cannot wait ...
 
All I need is ginger, cilantro, fresh grapes and radishes now in season ... Have mangos ... and always have fresh limes for my Sparkling Water ... & have the rest of the ingredients ...

Gol darn it that sounds good! Especially for a radish freak like me...I could eat those little beauties day and night.
The pairing with the mangoes...however unusual certainly sounds like something I'd try in a heartbeat....copied and pasted....thanks Brook.

I was a little concerned myself about that pairing, Dave. But it turned out surprisingly well balanced.
 
Original recipe called for quartering the radishes, but I thought that would make the pieces too large. So went with the six-wedge thing instead. The salad wouldn't suffer, either, from a couple more grapes.
 
Even so, I've no complaints.

OK...I have been haunted by this recipe since I first read it, and decided to pull the trigger last night.
The bride and I had been out for a good lunch, and I figured just a salad for dinner might be perfect.

The only thing I did differently than the recipe was to put the salad on a bed of fresh spring greens. I then noticed that I had run out of fresh ginger, but it didn't matter. The salad was bright tasting...not too acidic and the mango brought that perfect level of sweetness to the party.

This will be made many times over the summer....perhaps with the addition of strawberries, or some nut...possibly even some goat cheese. Next time I will slice the mango a bit thinner as well.

A gorgeous sub tropical salad Hoser, and thanks alot for posting your lovely photos.
 
I hadn´t taken a photo of mine, however, I had used some magenta oak leaf lettuce as a bed too.
 
I am quite a fan of Mango and Radishes ...

Looks really good, Dave. I'm so pleased it worked well for you. 
 
Slicing the mango thinner might work. What I found was making them shorter was a better approach. That is, if you cut your slices in half, they work better against the size of the radishes and grapes.
 
But it's all good. We'll definately be having this salad more often.
