Made Wood Sorrel And Rice for dinner. My first time making a recipe from
a "Wild edibles" cookbook. It's good, but more of a side dish than a
main, I think.
I forgot the measurements, but it's basically "Pick a lot of wood sorrel/oxalis. (I used a sandwich bag full.) Wash it and trim off the tough parts. Make a 2-cup batch of rice, using chicken stock instead of water. Stir the oxalis into the piping=hot rice and let it wilt in." |

Oxalic acid CAN be harmful, even deadly.
I have read that some people in GB died of eating rhubarb leaves during WWII. I do not know how much would be necessary to cause illness, however, I would be cautious in the amount I consumed. We have both yellow and purple wood sorrel here, but only nibble on a few of the unripe seed pods. To get a serious sour, lime or lemon, or for those who live in a warm enough climate, sour orange is the usual choice. |

I ran the idea past my Dr, and he said it was ok. And I have enough health issues that if I can eat it, probably anyone with normal kidneys can. I think you have to eat way more than a serving to cause a problem.

You don't have to overdo it. It's toxic, I was about to die. I cooked it with basmati rice. Reading the reviews on https://www.thewindupspace.com/best-basmati-rice/ and all the benefits of this rice, I told to me that I had to try. There was no problem with rice as in wood sorrel, I didn't calculate the proportions. I won't try next time this recipe. I'm gonna prepare with this rice an Indian recipe, which is easier and faster to prepare. Basmati with vegetables, have you ever tried? Or wood sorrel soup if we are talking about this here.
