I came across this word in "Under The Healing Sign," by Nick O'Donohoe. I'd never heard of it before, but the book described it as a Greek dressing made with lemon juice and olive oil> It sounded great, so I looked it up on the internet. Some versions added oregano or mustard or basil. I grew basil this year and didn't know what to do with it, so I put some in a zipper bag along with the zest of one lemon, the rest of the lemon and about 1/3 cup of lemon juice. I sealed the bag, mushed everything up, drained the liquid into 1 cup of olive oil and emulsified it,
I haven't tried it on salad yet, but it's a lovely golden color and smells wonderful, and the traditional "dip a spoon in it and taste" was promising. If it needs more kick, I may add some lemon pepper. |

That's a new word to me also Melissa, but it sounds delicious. I'll bet a clove of crushed garlic would put it right over the top.

I thought of that, but I put garlic in so many things by default, I decided to hold off at first.
I've actually been making variations on this ever since I got my dressing maker, but never knew it had a name. Many had garlic, onion or chives. My favorite had an equal volume of chive blossoms. (which involved picking each tiny flower off the head, but it was worth it.) The pile of flowers sank in and became little lavender specks in the yellow dressing. It had a nice lemon/onion tang. |
