Lettuce soup - a traditional recipe from Romania
Take as many potatoes as you like, peeled, quartered and boiled in lots of salted water and 2 tablespoons white vinegar. Don't pour off the water. Just before the potatoes are done, fry 1/2 lb. chopped bacon, 1 cup of chopped onions. Add 6 eggs and scramble until the eggs start to thicken. Add the partially scrambled eggs to the potatoes and water and stir, distributing the scrambled eggs. Bring to a boil, season to taste with salt and pepper, and take one head of coarsely chopped lettuce and stir it into the broth. Cover and take off the heat. Wait five minutes. Serve with crusty bread and a big dollop of sour cream in the centre of the bowl. |

Sounds good and easy! I must try this one. I wonder if one could boil the potatoes in chicken broth instead of water without ruining the authenticity of the dish?

Now that is one of the most interesting sounding recipes I've read here in a long time!
Have you made it personally Ron? I think the chicken broth sounds like a good idea too. |

i haven't yet made this - would like to try it. got it from another forum and a guy who said it was his romanian grandmother's recipe.
