Just playing catchup here...this is another one from the cookbook

Rita's Potato Salad


This is an off shoot from Rita's mother's recipe which was served at every barbecue or picnic as she was growing up.

Serves 8



   2 lb Potatoes red bliss
   8 each eggs hard boiled
   3 stalks Celery, sliced 1/4 inch slices
   2 cups Miracle Whip Salad Dressing
   1/2 cup Gulden's Brown Mustard
   8 oz Sour Cream
   1-1/2 tsp Kosher Salt
   3/4 tsp Black Ground Pepper
   1/4 tsp Celery Seed
   Paprika
   Oregano

Boil potatoes until cooked (keep them on the al dente side so they hold up well when mixing). Slice potatoes into quarters and then into 1/4 inch slices. Place in large mixing bowl
Cook eggs until hard boiled. Slice 7 eggs into quarters and slice. Place in large mixing bowl. Retain one egg for garnish...this will be sliced into 1/4 inch slices and will garnish the potato salad.
Slice 3 stalks of celery into 1/4 inch slices and place in large mixing bowl.

Dressing: in separate bowl, place Miracle Whip, mustard, sour cream, salt, pepper and celery seed and mix well. Stir into potato, egg and celery bowl until well mixed. Place into serving bowl and top with the sliced egg for garnish and sprinkle with paprika and oregano. Keep well chilled until ready to serve.

very nice-looking presentation, dave. our potato salad is similar, with slightly different spices and and onions rather than celery. my wife also adds diced kosher dills and a dollop of pickle juice. good potato salad is hard to find, and this looks like a good one!

It actually pisses me off sometimes....if we're going somewhere, there is a 50-50 chance they will ask for her potato salad before they ask for my pulled pork SIGH!!!!

LOVE the ingredients of the brown mustard as well as sour cream.....they add so much to potato salad, and no wonder Rita's has been a hit from the beginning!  It looks delicious and the recipe is a "have to make it" one too. Know that I'm buying 2 for gifts this christmas...there are too many good things in there not to share!
