i picked up this recipe from luis sier while ducking hunting in Argentina. He sereved it over a steak, but it goes very well over fowl or pasta.


2 bunches green onions
6 sliced bacon
3 or 4 cloves minced garlic
4 oz heavy cream
4 oz white wine
1 chicken bullion cube (crushed)
white pepper

cut the green onions lengthwise into small strips (this is the worst part.  if anyone has a better way than a paring knife let me know)
fry the bacon in a 10 pan till crisp
set the bacon aside
fry the onion strips in the bacon grease being careful not to get them over done
add the garlic at the end of the onions cooking just enough to sweat
add the wine bullion cube and a dash or 2 of white pepper
reduce about 25%
add the cream & heat through
crush the bacon strips and add to the sauce
Note:  to much reduction will make the sauce quite thick & it looses some of its flavor then
