Had a little paella party last night. I won't bore you with all the details because the recipe has been covered and posted in this forum many times. Guess I'll just show a couple of pics.

Someday I want to try making a paella, it's the one thing I kick myself in the butt for not trying when I was in Barcelona.
Is it possible to make it without a paella pan? Would a regular skillet work, cast iron, aluminum, etc? |

mike - having made this a couple of times, my short answer is YES, it can definitely be done, using the widest cooking vessel possible in your inventory.
having said that, if you have a world market or similar place nearby, i highly recommend picking one up. i got mine for 20 or 25$ at world market - it's not top-of-the-line, but it is quite serviceable and can be used for quite a few things besides just apella. also, it included a whole kit with the necessary ingredients etc.
when the time comes, let us know. whether you use the paella pan or not, it will be a wonderful experience.

You want a wide shallow pan to make it. What's important with paella is to have the big surface area.

agreed, darko - i've also found that "area" for the heat source should be as close as possible to the diameter of the pan, as well. Small stove-top burners don't always cut it, and it might be necessary to use turn on more than one burner, so simply do it outside over flame ~
