Black bean and pasta soup is made in my family for years form the times We were in Romania . it used to be done with smoke pork ribs and smoke big piece of bacon. We do it with smoke beef ribs (my wife and my daughter don’t eat pork) First you soak the beans over night and rinse them You smoke some ribs, not a heavy smoke. In a pot you put the. Beans ,the ribs ,few carrots , 5 cloves of garlic ,one or two onion, salt, B Pepper and a tbsp of chicken stock powder. Bring it to boil and let it simmer for 3 hours ,till the beans soften. Remove the onion from the soup Add pasta and let it simmer for 30 minutes . Serve hot. Thanks |

Buon Giorno Ahron,
Interesting that Rumania would employ Black Alubias ( frijoles = legumes or beans ) ... This is in fact, similar to Feijoada, the Brazilian National Dish ( one of the 1st recipes I had ever posted ). Black beans are very common fare in: Brazil, Portugal, Cuba, The Dominican Republic, Puerto Rico and Mexico). Feijoada pronounced FEI JOE AH DA is listed in South American Recipes ... I would assume that Vasco da Gama and Marco Polo had travelled through Rumania as it is very close to Greece and Turkey. I shall jot this one down for the Autumn List ... The Vet and I lived in Sao Paulo for one year, and I have prepared this Feijoada dish here in Spain. It is divino. However, an autumn and winter dish. Enjoy ! The recipe was given to me by a man, who is Galician, Belarmino Iglesias Fernández and he owns five Brazilian restaurants in Brazil and Argentina & Madrid Capital, a winery in Galicia in Ribera Sacra, Ourense and a Waygu Cattle Ranch in Brazil. The Vet´s specialty is Cattle Medical Treatments and Birthing Defect Research. Thus, we also lived in Punta de Este, Uruguay and Buenos Aries. He travels there twice a year ... I cannot always go, as I have my professional position in journalism here and in Italia, and the Gals ( my 2 daughters married with children). Let me know how your feijoada turns out ... Ahron - thanks for posting such a delicious-looking family recipe. Those beef ribs look incredible, and I can only guess how wonderful they are with the beans and pasta in the soup. This must certainly be good winter food!
