This is a good starter recipe for making other fruit, nut, savory, or herb scones.
Scones:
2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons butter cut into 1/2" pieces
1 cup heavy cream (whipping cream is good, too)
Strawberry Jam
Glaze:
1/4 cup lemon juice (fresh is best)
2 cups powdered sugar (makes a lot of glaze)
1-2 tablespoon water (if needed)
Preheat oven to 350F
cover a cookie sheet with parchment paper (set aside)
In food processor pulse the flour, sugar, baking powder, salt, and butter until the mix resembles a coarse meal.
Transfer mix into a bowl and gradually stir in the cream until it forms a dough.
Lightly flour a work surface and roll the dough out to resemble a thick cookie dough (about 1/2" thick)
Use a large (3" diameter) cookie cutter or just cut into triangles about 3" tip to tip.
Transfer to cookie sheet lined with parchment paper.
Take a spoon and make a depression in the center of each scone and spoon in 1/2 teaspoon of jam into each depression.
Bake for 18-20 minutes or until the edges are golden brown. Transfer to a wire rack and let cool for 30 minutes before glazing.
Glaze:
Mix lemon juice and powdered sugar until smooth, add enough water (if needed) to make the mix spreadable. Drizzle glaze over the scones and let it set for 30 minutes.
Eat!!!
Other things we have used:
We have used orange juice and orange zest instead of lemon juice.
Orange marmalade.
Raspberry Jam.
Blackberry Jam.
Rosemary or other herbs in the scone mix with lemon curd instead of jam.
Herb scones with no jam and Lemoncello instead of lemon juice in the glaze.
A few chopped walnuts before glazing
and....
Just plain with BUTTER!

Oh man this sounds so good. I got some healthy raspberry bushes out back and will try this recipe with the raspberries in it, probably the glaze. You think that would work?

Absolutely, you can also put fresh berries on after the scones cool, but before the glaze goes on. Any fruit juice will work with the powdered sugar.
