A quick and simple Mediterranean salad. INGREDIENTS: 1 cup (220 gr.) orzo pasta 5 tablespoons olive oil 4 cups vegetable broth 1 teaspoon salt 1/2 cup fresh dill, chopped 1/2 cup feta cheese, diced Warm the oil in a high lid pan with heavy bottom. Saute the pasta for 3 minutes, untill it turns red, and golden. Add the vegetable broth, salt, and half of the dill. Simmer for 15 to 20 minutes untill pasta is cooked and the liquid is absorbed. Take the pan from the heat and leave it to get cold. Stir well, add the cheese and serve adding more dill and feta on the top. Enjoy!
