Decided to make some pan browned Brussel sprouts tonight and serve it up with some of my almost famous 4 cheese mac n cheese.
Started out by cutting the sprouts in half and trimming any loose leaves, slicing 3 cloves of garlic nice and thin and getting some pignolis measured out and some fresh parmigiano reggiano grated up. Put about a Tbsp evoo in the pan and melted 2 Tbsp of butter in it, then put the garlic in to saute just until it's fragrant, then moved it to a dish with a slotted spoon. Now in go the sprouts cut side down for 15-20 minutes until they are browned and tender, but still a bit on the al dente side. Also salt and pepper. Oops! almost forgot...toss the pignolis in as well. After 15 minutes start checking them and you'll see they are browning nicely ...like these Now we take some tongs and remove the sprouts to a dish, then toss the garlic back in the pan with the pignoli for a few minutes...you can add a bit more butter or oil at this point if you think you need it. I always need a little more butter Now just pour the mixture over the sprouts and add the grated parm...serve it up with whatever you like. Here it is with my mac and cheese...give this a try if you've never had sprouts this way...it's really very tasty. |

Good Morning Hoser, I thought I was the only person who really likes Brussel Sprouts done Mediterranean style, that is:
sautéed in E.V. Olive Oil with fresh minced garlic and sprinkle of sea salt ...

Sounds good.
Unfortunately, they are not that popular in Spain and thus, I have to enquire with my Farmer´s Market ( José Arribas ) and ask when they are available. Have not had them in quite sometime.

very nice, dave! picture-perfect plating for a delicious-looking recipe that would be very welcome at my table.
I could be wrong, but i don't ever recallseeing brussels sprouts in our produce departments; kind of like veal and lamb, we just don't have them readily available here! i'll keep a look-out, or perhaps try with cabbage or even broccoli.
