Tasty Rice Pudding.
 
 
 
This is a simple fail proof rice pudding that shall change your mind in deed about the bland, tasteless related recipes you have all seen.
 
 
 
My Nonna, though Italian from Milano, Lombardia, prepared her Rice Pudding for the requests of her guests at her Trattoria. Only use: A Short Grain Rice ( NIHAKI FROM GREECE or ARBORIO FROM LOMBARDIA OR VALENCIA ), THE KEY INGREDIENT.
 
RECIPE:
 
Nonna´s Classic Greek Rice Pudding ...
 
1 cup or 200 grams of Nihaki or Arborio short grain rice
560 ml. or 2 3/4 cups water
4 cups whole milk
1 cup of sugar
1 tblsp. butter
2 egg yolks at room temperature
1/4 tsp. vanilla extract or finely grated
1 tsp. ground cinammon
 
1) in a large sauce pan, combine the rice and water, bring to a boil and simmer 8 mins.
2) add the milk and bring back to a boil, reduce heat and simmer 10 mins.
3) add the sugar and butter and continue with concoction , stirring gradually and gently for 10 mins.
4) beat the yolks, and vanilla together and stir this mixture vigorously into the Rice and remove immediately from the heat
5) continue stirring for a minute or two
6) pour the mixture into 6 to 8 individual serving cups and cool to room temperature, refrigerate to chill and sprinkle with cinammon just before serving.

I once tried  rizogalo (rice pudding) with tahini. It tasted so different.
I managed to find the recipe.
I am planing to prepare it this weekend so I am going to post it here.
