Tropical Shrimp Salad Cocktail

Firstly, when one travels, there are always last minute menu plans, due to product availability, and thus, this tropical delightful salad prepared with shrimp started as a shrimp cocktail, however, has been stuffed into baby fresh sweet aromatic pineapple shells.
 
Here is the recipe for 6 adults ...
 
just ripe fresh baby pineapples ( 1 baby pineapple shall be filled with tropical shrimp salad per person )
 
2 granny smith apples
 
2 red delicious apples
 
1 kilo of jumbo shrimp ( one can use lobster or crab or chicken )
 
assorted lettuces of choice
 
4 Greek Natural Yogurts ( not Danon )
 
1 lemon
 
salt and pepper
 
sliced pineapple
 
4 tangerines or oranges of choice
 
Evoo
 
1) simmer the shrimp for 1 1/2 minutes until coral rose  and then, let cool and peel
2) slice pineapples length wise; and empty the pineapple shells being very careful not to break the shells
3) slice pineapple in cubes or other decorative shape of choice
4) sprinkle the apple peeled and de-cored apples with the lemon and then, peel oranges and remove pith and all white parts
5) slice the fruit decoratively
6) now place the rinsed shredded lettuce leaves as a bed in the pineapple shells
7) add the fruit sliced in julienne or cubes
8) place shrimp on top sliced
9) whisk the yogurt in a bowl with the Evoo, freshly ground pepper and salt to taste
10) decorate with pineapple cubes arranging with shrimp on top
