After preparing uncountable sauces over the years, my basic organic tomato is light, basil scented and very healthy ... This Light Tomato Sauce is called Sugo di Pomodori Leggero ...

 
Here is the recipe:
 
SUGO DI POMODORI LEGGERO - LIGHT TOMATO SAUCE
 
6 pounds vine ripened juicy red tomatoes peeled
2 tblsps. Evoo
2 onions minced
1 1/2 tsps. salt
3 cloves garlic minced
3/4 cup fresh Ligurian basil leaves coarsely yet finely chopped
 
1) PLACE A LARGE WIRE RACK ON A BAKING SHEET WITH SIDES.
2) Seed the tomatoes and sprinkle sliced tomatoes with salt and peel skins
3) place the tomatoes cut side down on the rack and let drain 30 mins. Coarsely and finely slice.
4) in a large heavy sauce pot, heat Evoo over a medium low simmer and add the onions and garlic. Stir frequently, until the onions are tender and golden, not brown 6 to 7 mins.
5) Add the tomatoes, and bring to boil
6) reduce heat to simmer low slow flame
7) simmer 15 mins.
8) add basil and simmer another 15 mins.
9) adjust seasoning with salt and if you wish freshly ground black pepper
 
Note: this sauce has 120 calories and 5 grams of fat and Zero Cholesterol.
 
*** ONE CAN USE CANNED WHOLE PLUM TOMATOES, IF FRESH ARE UNAVAILABLE IN YOUR VICINITY WITH TOMATO PASTE TO THICKEN; AND DRY BASIL ...
