Good Evening,
 
A DAMSON ( a UK indigenius plum ) is a fruit, utilized in preparing cubed lean braising beef steak, in the  Warwickshire, U.K. region and the British Isles with an indigenious plum.
 
Doubes or cubed of beef are perfect for preparing this classic dish.
 
BEEF DAMSON POT
 
serves 4 to 6
 
Cooking time: approx. 1 1/2 hours - 2 hours
 
 
 
UK DAMSON WHICH ARE INDIGENIOUS TO
THE UK ... SUB: PURPLE PLUMS OR RED OR PURPLE
PLUM MARMALADE / JAM OR PRESERVES ...  
 
 
INGREDIENTS ...
 
500 GRAMS OF CUBED LEAN BRAISING STEAK
1 TBLSP. FLOUR
2 TBLSPS. EVOO
1 STICK CELERY OR LEEK SLICED INTO CHUNKS
1 ONION PEELED AND CHOPPED ROUGHLY
2 FINELY CHOPPED OR MINCED GARLIC CLOVES
2 PARSNIPS / 2 TURNIPS peeled and chopped into long wedges ( sub: potato if unavailable )
2 star anise
10 green pepper corns ( optional )
600 ml. red wine  or DAMSON / or PLUM BRANDY
2 tblsps. marmalade DAMSON JAM OR PLUMS
 
1) Toss the braising meat gently in seasoned salted flour
 
2) heat the voo in a large sauté skillet and ten add the meat and brown on both sides
 
3) add the leek or celery, or both if you wish; and the onion and garlic, and the potatoes or parsnips or turnips and cook for 2 mins.
 
4) Now add a few star anise and a few green peppercorns
 
5) Combine the DAMSON or red wine and the jam / marmalade and pour over the veggies
 
6) Season and bring to boil
 
7) transfer to an oven proof clay earthenware or casserole and cook for 1 1 /2 hours to 2 hours until meat is melt in mouth tender and 30 mins. before cooking time, stir in fresh plums or DAMSONS
 
8) remove the star anise before serving and serve with OVEN WARM CRUSTY BREAD AND RED WINE ...
