What do you do if you are four for diner and only three ribeye  steaks

ENCALADA  will save the day !!!!!!!!!





This is my emergency last minute  encalada .

Ribeye steak 



guacamole and hot very hoooot beans




tomato onion and chili salsa

It's not fair, Ahron. I come in from work, starving. And the first thing I have to do is look at your great pix.

How about, just once, cooking a bad dish, and photographing it out of focus. :>)

GREAT for 4th July ... It is only 2 weeks away ... Gives me a chance to run all the way downtown, for the authentic Mexican ingredients ...

Are the Tortillas Corn ? or  Wheat ?

The tortillas are wheat flour and the beans are the tasty ones.
