Yesterday was the first day of spring and with it comes whitebaiting season (officially it opened yesterday)
There is nothing like a fritter of freshly caught whitebait on a slice of new buttered bread. 5 minutes from net to served. ![]() The recipe couldn't be simpler... For
each cup of fresh whitebait mix together one beaten egg, and one heaped
teaspoon of flour, salt and pepper to taste. Nothing else. Cook in moderately
hot pan with a little butter to prevent sticking. Don't try to mess with it. This is one of those foods that is perfection in its simplicity. ![]() |

Ahhh, I see. You're using them whole. So, yeah, smelt wouldn't work in that application.
When we go smelting, the big thing is to prepare them right on scene. Naturally there's always an impromptu competition for who makes the "best" smelt; and ongoing arguments whether dry breading or batter dipping is better. But you know what? In the middle of the night, with a spring breeze and a cold beer, it's all good. Thanks for posting your recipe, Anne. |
