I made a butternut squash and roasted garlic galette with ricotta, fontina and parmesan cheeses.  
There's an entire head of garlic in this rustic free form tart.

Assembled


On the cooker at 400F


Getting all melty 


This is certainly not health food but it was absolutely delicious.

The recipe, along with many other great ones, may be found here

6 T butter, 1 cup grated fontina, 2 T olive oil and 1/2 cup ricotta make this a high calorie/fat indulgence.
That said, I could eat the whole thing Embarrassed
