Carne asada means grilled meat and it is one of my favorite Mexican dishes.  Today we are grilling marinated flank steaks but skirts work very well.  

Ancho chili marinade:
Olive oil, soy sauce, lime juice, garlic, dark brown sugar, black pepper, Mexican oregano, cilantro, and ground ancho chili.


12 hour marinated flank steaks


Seasoned with more cumin and warming on the grill indirect over coffee wood smoke.  Coffee wood is very dense and produces wonderful smoke taste for longer periods than most smoking woods.


Searing direct


The Rajas:
Sauteed onions, roasted & peeled poblanos, garlic, Mexican oregano, black pepper and heavy cream. Crema Mexicana was unavailable.


Plated on a bed of rice and rajas and sided with refried black beans, sliced avocado, lime and garnished with cilantro and crumbled cotija cheese.

I didn't have time to fry fresh corn tortillas but that's ok.  They weren't really necessary.

   Wonderful looking/sounding recipe, Gracoman...thanks for sharing.  Interesting comments about the coffee wood, I'll have to keep my eyes out for some.  I also like the option of setting your grill up with two levels, what type of grill is that?  It looks similar to a Green Egg...Komodo type cooker.

My grill is is a ceramic Primo XL Oval.  Similar to a Green egg but with an oval shape giving it greater versatility.  It has a divided firebox giving true 2 zone cooking as well as multiple grate configurations making reverse searing simple.


It is airtight making it extremely efficient.  It can produce extended 150F or 1000F making it a decent pizza oven.  Not perfect but decent.  It can be used as a grill, smoker or an oven in any weather conditions due to the ceramic insulation.  

On the down side it has the same pitfalls as all ceramic cookers.  It is heavy, expensive and breakable and accessories are all extra.  The 20 year warranty helps with that.  

I've owned this one since 2006.

I've only been able to find coffee wood online but it has become my preferred smoking wood.
