Craving a quick comfort casserole with a touch of curry.
A true family favorite for many Canadians from the Best of Bridge. A Canadian Cookbook Institution http://www.bestofbridge.com/about/ http://www.bestofbridge.com/classy-chicken/ I can only speak from my experiences, but I feel that for many Canadians of my generation that their very first memories of eating the flavors of a curry came from this dish. I have never used asparagus in this as it does not appeal to me in a casserole, but fresh or frozen Broccoli or a bag of thawed,drained frozen California mix works perfectly. I sub Cream of Mushroom for the Cream of Chicken. And today I used Turkey instead of chicken, but have also used game birds in the past. Huge key to success in this dish is regardless of vegetable selection or type of poultry, do NOT skimp on the black pepper before frying the meat cubes. I use about 1/2 tsp. A good mild Curry Powder suitable for Korma is required. I like Sharwood's Mild Served over rice Enjoy |
