Has anybody here tried cooking amaranth? I'd heard all kinds of wonderful things about it, but when I tried making some, it tasted like, well, dirt. The package didn't say "rinse first," or anything like that.
Seriously, it's like eating an expensive mud pie. Where did I go wrong? |

I believe some folks dry fry amaranth first to pop the grains, kind of like popcorn, before using it. I don't know enough about amaranth to know for sure if this improves the flavor but it is a standard technique so I suspect it might.

I sprinkled a little on the porch railing by the birdfeeder. Nothing seems to be eating it. not even the squirrels!

I've had it in other things like a crust on fish, or breakfast bars, but never by itself and never in anything i made. I never noticed a 'dirty' taste but then it's a pretty small component of whatever it is I'm eating so I doubt I'd have noticed.

I've done some checking on amaranth since reading this thread. Some folks, like Melissa, think it tastes like dirt. Others say it has a pleasant nutty flavor. I'm wondering if amaranth has a characteristic similar to cilantro. Some people swear cilantro tastes like soap and avoid it while others love it.
How can something that human beings have been eating for thousands of years taste like dirt? I'm sure palates have changed over the ages but dirt? There's only one way I'm going to find out how I react to it. I'm not going to go out of my way, but I'll keep my eyes open and If I happen to see amaranth I'll pick it up. |

I'm not excited enough about amaranth to ask you to go out of your way to ship anything to me. If it happens it happens. The nutritional profile of amaranth may be over the top but if it tastes like dirt what's the point?
