Otbibnaya is the Ukrainian version of schnitzel. It differs from almost every other type of schnitzel out there in that it doesn’t use bread crumbs, only flour for the coating.

We started by cutting 1/2” slices from a pork loin, then pounding them flat with a tenderizer, being careful not to pound holes into it.

Then she patted Pelmeni seasoning into each filet. You can find it at any Eastern European grocery or specialty store.



Pelmeni is a Ukrainian meat dumpling that is smaller than a Veranyki (Perogie). For Pelmini, the seasoning is sprinkled on after they are cooked, with a little butter.



Then, she dips each filet into eggs beaten with a little milk, then dredged in flour and into a frying pan at medium heat.



Fry to a golden brown, and serve with mashed potatoes and other condiments. Tonight I had lactofermented beets and turnips and homemade sauerkraut.



Yes, there is way more than we need here. I’ll enjoy some for lunch this week.

This looks excellent, Martin, and is not much different from how I usually do deer steaks at home; only the seasonings would be different. Any guesses as to some of the major components of the Pelmeni?

With the fermented beets, I have done that before; the resulting juice (which I just call Beet Kvass), is really good, and quite healthy. Your post reminds me that I need to get some more going....

Ron, the ingredient list is:

Salt, onion, garlic, coriander, red chilli flakes, parsley, black pepper, marjoram, bay leaf.
