I collected our home-killed home-grown beef today, nothing new there, been doing it for years. This time however we have switched to a supplier who actually read the order form that I supplied him.
I have 195kg of fresh two year old beef, a ham, a turkey, and a side of bacon stored away now, I just need a pig and two sheep and we are good for another twelve months.

I got the fillets cut into four pieces and vacuum packed, I will freeze them in about 8-10 days. Making them three weeks aged from killing day.

I have always had a good idea of how to cut up a carcass, but I found these videos very useful -

Well, as of today, we made an arrangement with a local rancher for 50 pounds of ground beef. I usually rely on our own family beef when my parents have one slaughter one, but a great opportunity came up at a great price so we secured a bunch.
 
Ground beef always comes in handy, and to me it's always best when local - it's much, much leaner, it's infinitely tastier and I'd be willing to go out on a limb and opine that it's healthier, too - so why not?
 
Lots of great ways to use this, but I will for sure be applying it to more than a few home-cooked specialties that are already here on FotW - or might soon be in the future! Tongue
